Your menu, intended volume and location of operation will determine your equipment, overall size and, subsequently cost.

With the exception of location catering, motion picture catering and emergency response service, it is a good idea to limit your menu offerings such that you can serve your clients in a timely fashion.  While some operators have been known to deliberately slow down their operation to give the false impression of demand with long lines, this is poor business practice and your customers will tire of the wait quickly.

Think about equipment that can be used for a wider variety of foods.  This will enable you to change your offerings from time to time.  Unless you have a very niche product, it is seldom wise to have one primary piece of equipment with limited capabilities.

Contact your local health department to gain an understanding of what is required for permitting outside of fees; for example, do they require any food handling certification, commissary letters, etc?
